Recipes from "Down Under", Oceana and the Pacific Rim

New Zealand is, of course, sheep country and the lamb from New Zealand is known worldwide as the most delicious. You can't go wrong with recipes using baby lamb from New Zealand. Because of the Maori influence there, they sometimes cook in the Maori tradition using underground "hangi" ovens. A hole is dug in the ground and hot coals are laid first and the food (usually meat and vegetables) is covered with cloth and earth traps the heat around the food. "Kai" is the Maori word for food.
