TIPS:

Successful baking always calls for accurate measurements.

Too hot an oven will cause cakes to peak; too low an oven will cause cakes to fall!

A cake is done when it springs back when lightly touched; or a toothpick inserted in the center should come out clean.

Cool cakes on wire racks for at least 10 minutes before removing from pans.

For cookies especially, all ingredients should be room temperature.
