TIPS:
For those who don't know how to prepare fish, it's easy. Take any fillets, like halibut, swordfish, sole, turbot, etc...... and coat them with mayonnaise and wrap them in foil. Set your oven at 400F and bake for 30 minutes and EUREKA - a good fish dinner! If you are using fish right from the refrigerator, use a little more time. A little tarragon sprinkled over the fish does wonders (before wrapping it, of course!).
Freezer Tip: FISH - to freeze whole fish, like mackerel or trout, stuff body cavity with a small roll of aluminum foil, so that the fish stays a good shape. Remove the foil; stuff the fish and cook straight from frozen!

I have tried to acknowledge the source of the recipe in most cases and if there is no such acknowledgement; it's because it was from memory or handwritten notes from my mother and that I have jotted down from other family members. Also recipes go back for several years and I never bothered to identify the source at the time I copied it or pulled from the pages of magazines and newspapers over the years.
