Poultry and Game Recipes
Chicken and turkey are the most popular poultry choices - but some recipes call for duck, goose, cornish hens and cangive a menu a nice change. Rabit, pheasant and venison are listed as game and game birds - prized by some cooks, as well as the hunter!

TIP:
Be sure to rinse poultry well and dry before cooking. If you are roasting and stuffing, rinse and dry the interior of the cavity also! Rinsing does NOT kill bacteria; so you must be sure you do not cross-contaminate sink and sink surface areas. Be sure to wipe down all sink surfaces with anti-bacterial spray after rinsing poultry. You must also ensure that the chicken is cooked thoroughly (165 F)!
